Aloo-Phali Sabji (potato- Long beans Stir fry)

Ingredients

  • 3/4 cup - chopped long beans (phali)
  • 2 -diced potatoes
  • 2- tomatoes chopped
  • 2- onion chopped
  • 2 heaped tsp - coriander powder
  • 1 tsp -chilli powder
  • 1/2 tsp - turmeric powder
  • salt to taste
  • 2 tbsp - oil

Preparation

  • 1 Heat oil in a pan.
  • 2 Saute the onions till golden brown.
  • 3 Add the tomatoes, followed by coriander powder, chilli powder and turmeric powder and fry till the tomatoes turns mushy and oil separates.
  • 4 Add the potatoes and long beans with salt. Stir well.
  • 5 Cover and cook on low flame till the vegetables are cooked through. Serve with rice or roti.
